Es puter kelapa dinangkaan

Es krim zaman dulu, jajanan anak SD waktu saya di kampung. Saya ingat di rumah suka bikin sama papah (alm), alatnya sederhana seperi termos dua lapis yg lapis luar diisi sama garam dan es batu sedangkan dalam termosnya diisi adonan es krim lalu ditutup rapat dibungkus karung diikat dan termos itu digulundungkeun (digulingkan) ke arah saya lalu saya gorolongkeun balik ke arah Papah demikian bolak balik ber kali-kali, sampai es jadi beku, ih amazing. Saya coba bikin dengan bahan dan cara sederhana saja karena saya tidak punya alatnya atau ice cream maker. Kebetulan ada kakak dan adikku datang ke rumah, disuguhin es itu sambil ngobrol, semua pada inget suka bikin sama Papah. Kata mereka enak miriplah rasanya dan ada tambahan kelapa parut menambah kriuk-kriuk. Jadi ada gegeleun (tergigit). Hm ngangenin, es puter nostalgia sewaktu kecil. Segar manis gurih ditambah nangka jadinya makin wangi.

Bahan-bahan
600 ml santan, dari 2 butir kelapa
200 gram gula pasir
1 sdt garam
1 sdt vanili
150 gram kelapa setengah tua, parut/kelapa muda keruk
10 gram jeli/gelatin (bisa skip)
300 ml air panas

Topping :
5 biji buah nangka kuning, potong dadu

Langkah
1. Campur santan, gula, garam dan vanili, masak sambil diaduk sampai mendidih. Masukkan kelapa parut, aduk sebentar, angkat. Sisihkan.


2. Larutkan gelatin/jeli dengan air panas, aduk hingga rata, tuang ke dalam adonan santan. Aduk-aduk biarkan dingin. Simpan dalam freezer.


3. Setelah beku keluarkan dari kulkas lalu keruk dengan sendok. Haluskan dengan mixer. Masukkan kembali ke dalam freezer. Lakukan 2 atau 3 kali sampai es krim benar-benar halus dan lembut.



4. Setelah halus pindahkan dalam wadah, tambahkan buah nangka, aduk rata. Masukkan lagi ke dalam freezer sampai beku lagi.


5. Saat akan disajikan, keruk es krim dengan sendok atau scop es krim taruh dalam gelas.
