BANANA SPONGE CAKE

Bahan
500 gram pisang matang tanpa kulit (sy : pisang ambon)
50 ml susu cair, suhu ruang
4 butir telur ukuran besar
100 gram gula pasir
100 gram brown sugar
1/4 sdt garam
300 gram terigu protein sedang
25 gram maizena
1 sdt baking powder
1 sdt soda kue
1 sdt vanilla
200 gr mentega, lelehkan
1 sdt cinnamon powder (saya tambahkan karena menurut saya brown sugar + cinnamon klop banget

Topping : 
Potongan pisang, almond cincang dan kismis

Cara membuat:
Panaskan oven 160'C. Siapkan loyang tulban 23 cm. Olesi dengan margarin dan taburi terigu tipis-tipis. Sisihkan
Hancurkan pisang hingga lumat dan lembut (karena sudah matang sekali jadi saya hancurkan pakai garpu saja). Campur dengan susu cair. Ayak terigu, maizena, baking powder dan soda kue. Sisihkan
Kocok telur, gula pasir, brown sugar dan garam hingga mengembang, putih dan kental sekali (ini penting karena adonan akan diberi pisang yang berat
Masukkan campuran pisang dan susu cair dalam 2 tahap, aduk perlahan secara merata dengan spatula.
Masukkan campuran tepung (terigu, maizena, baking powder dan soda kue) dalam 3 tahap, aduk merata dengan teknik aduk balik
Masukkan vanilla dan mentega/margarin leleh. Aduk merata dengan teknik aduk balik hingga adonan benar-benar homogen. Jangan ada mentega/margarin leleh yang belum tercampur rata.
Tuang ke dalam loyang. Ratakan permukaannya, beri topping. Panggang selama 45-50 menit hingga cake matang kecoklatan dan kokoh (sesuaikan dengan oven masing-masing) dan Test tusuk jika sudah tidak menempel dan cake jika disentuh permukaannya membal maka cake sudah matang
