MIE TOM YUM SEAFOOD

Bahan utama:
350 400 gr mie
300 gram udang, kuliti
300 gram cumi, kerat dagingnya
300 gram fillet ikan, potong dadu
5 buah jamur hioko, rendam/ rebus hingga empuk, potong-potong
6 buah crab stick
6 buah telur rebus

Bahan Kuah Tom Yum:
2 lt kuah udang (rebusan cangkang udang)
5 batang serai, memarkan
10 lembar daun jeruk
1 jempol jahe, memarkan
4-5 sdm gula pasir
4-5 sdm air jeruk nipis
1 genggam cabe rawit merah
5 sdm kecap ikan
2 sdm minyak wijen
Garam, lada bubuk secukupnya
Minyak secukupnya untuk menumis bumbu

Bumbu dihaluskan:
8 siung bawang putih
5 siung bawang merah
15 buah cabe rawit merah/selera
6 buah cabe merah besar
1 sdm ebi

Cara memasak:
1. Setelah dicuci bersih, lumuri cumi, fillet ikan, dan udang dengan jeruk nipis. Diamkan sekitar 30 menit, cuci kembali dan tiriskan.
2. Rebus mie hingga matang, tiriskan. Lumuri sedikit minyak agar tidak lengket
3. Tumis bumbu halus hingga matang. Selanjutnya masukkan semua bahan kuah tom yum, didihkan. Khusus pemberian jeruk nipis dan gula berikan sedikit demi sedikit hingga didapatkan rasa asam manis yang pas.
4. Rebus sekitar 15-20 menit hingga aroma semua bahan meresap ke kuah. Tambahkan air bila kuah tom yum menyusut.
5. Masukkan udang, cumi, fillet ikan, crab stick, dan jamur hioko. Rebus 30-60 detik saja, matikan api.
6. Penyajian: susun mie di mangkok, tambahkan telur rebus dan seafood di atasnya. Terakhir siram dengan kuah panas tom yum. Sajikan selagi panas

Note: 
bila tidak langsung disajikan, maka tiriskan terlebih dahulu seafood nya agar tidak overcooked dan alot terendam kuah tom yum terlalu lama.
